Brown Sugar Milk Tea Protein Pudding

Ingredients:

  • 7g unflavored gelatin powder (about 1 packet)
  • ¼ cup cold water
  • 300g unsweetened vanilla almond milk (or any other type of milk)
  • 200g lactose free cottage cheese (I used Good Culture)
  • Two scoops of Brown Sugar Milk Tea protein powder

Optional topping(s): whipped cream

Step by Step:

  1. Bloom the gelatin powder in cold water and set aside.
  2. Blend the cottage cheese until smooth and set aside.
  3. In a small pot, heat the milk on medium or medium-low heat. Stir until it begins to simmer. 
  4. Turn off heat and whisk in the bloomed gelatin.
  5. In another bowl, mix together the gelatin mixture with the blended cottage cheese. 
  6. Then add two scoops of Brown Sugar Milk Tea protein powder and mix until there are no clumps.
  7. Sift the mixture to further remove any clumps.
  8. Separate into four equal portions and refrigerate for 3 hours or until set.
  9. Top with whipped cream or toppings of choice and enjoy!

Notes: Don’t have cottage cheese? Feel free to replace cottage cheese with heavy cream, coconut milk, etc. If you want it sweeter, you can adjust the recipe to taste!
